In Caribbean cuisine, it is used in Caribbean jerk seasoning in moles and pickling and also as an ingredient in curry powders and commercial sausage preparations. In Middle Eastern cuisine, it is used to flavour a variety of stews and meat dishes. In the United States, it is used mostly in desserts. In Arab cuisine, many dishes call for allspice as the sole spice added for flavouring. In Great Britain, it appears in many dishes, including cakes.
